This is a wonderful Christmas recipe. So versatile that you could just as easily serve these delightfully tasty stuffing balls as canapes as you could with your roast turkey on Christmas Day. I urge you to try them as you won’t be disappointed.
Sausage, Sage and Chestnut Stuffing Balls
Makes around 48 small stuffing balls
You will need
– 25g fresh parsley
– 12 large sage leaves
– 2 medium sized onions
– 600g free range pork sausage meat stuffing
– 240g peeled and cooked chestnuts
Peel and chop the two onions and fry gently in a little oil until soft
Whiz up the sage and parsley in the food processor (I used the Kenwood for this) until very finely chopped
Add the sausage meat, chestnuts and lightly cooked onions to the mixer bowl
Blend on a medium speed in your mixer until all the ingredients have blended together eliminating all big lumps of meat, onion or chestnut
Remove the blade from the mixer.
With your hands take the mixture from the bowl and start rolling it into balls about the size of a ping-pong ball. Place the stuffing balls onto a non-stick baking tray leaving approximately 1-2 inches between each ball
Cook at 220c for 25 minutes and serve with your Christmas Turkey or as a delicious party snack.
